Sticky Date Cake
- 1 cup dates
- 1 cup water
- 125g Butter
- 1 cup plain flour
- 1 ½ teaspoons baking powder
- ¾ cup brown sugar
- 2 eggs
- ½ cup brown sugar
- 20g butter
- 150ml cream
Step 1
Heat oven to 160 degrees Celsius
Step 2
Put the dates and water into a saucepan and bring to the boil
Simmer for 10 minutes
Add the butter and mix through until melted
Remove from the heat
Step 3
Pour the date, water and butter mixture into a food processor
Add the remaining date cake ingredients and process until well mixed
Scrape the cake mixture into a shallow pan, lined with baking paper
Bake in the oven for 35 minutes
Step 4
Caramel sauce
Melt the butter and sugar together and cook for 3 to 4 minutes
Add the cream and mix through
Step 5
Place a thick slice of date cake on a serving plate and serve with a small jug of caramel sauce
